This special wine is made from organic grapes, grown on 30 year old vines in the stony soil of the Rhône Valley. The grapes are harvested by hand before being fermented in cement tanks and aged in stainless steel. The wine is unfiltered and lightly fined. It is juicy with notes of red fruit, thyme, and sweet tobacco. A perfect pairing for pizza.

Roasted Local Vegetables with Bagna Cauda
A variety of Patchwork Garden roots, including carrots, green luobo radishes, hakurei turnips and parsnips are roasted till rustically caramelized, then drizzled with the famous Italian olive oil-based flavor-bomb known as Bagna Cauda. Whole cloves of Mad River garlic are slowly cooked in milk, drained, and then braised in olive oil with anchovies until a beautiful thick paste is formed. We add softened butter turning it into the best accompaniment a vegetable ever saw. You’ll be glad you did! If you prefer, we have a dairy free as well as a vegan version of the Bagna Cauda as well.
